Ingredients

  • Firm tofu - 300 grams
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Green bell pepper - 1, sliced
  • Carrot - 1 medium, julienned
  • Spring onions - 2, chopped
  • Dried red chili peppers - 2, whole
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Doubanjiang (broad bean paste) - 1 tablespoon
  • Sugar - 1 teaspoon
  • Cornstarch - 1 teaspoon
  • Water - 100 ml

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut into 1-inch cubes.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the minced garlic, ginger, and dried red chili peppers to the skillet, stirring for about 30 seconds until fragrant.
  4. Add the tofu cubes to the skillet, frying until golden brown on all sides, about 5-7 minutes. Remove the tofu and set aside.
  5. In the same skillet, add the sliced green bell pepper and julienned carrot. Stir-fry for 3-4 minutes until slightly tender.
  6. Return the tofu to the skillet, then add the soy sauce, rice vinegar, doubanjiang, sugar, and water. Stir well to coat all ingredients.
  7. Dissolve the cornstarch in a small amount of water and add to the skillet, stirring until the sauce thickens, about 1-2 minutes.
  8. Stir in the chopped spring onions and cook for an additional minute before serving.
