- Firm tofu - 300 grams
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Green bell pepper - 1, sliced
- Carrot - 1 medium, julienned
- Spring onions - 2, chopped
- Dried red chili peppers - 2, whole
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Doubanjiang (broad bean paste) - 1 tablespoon
- Sugar - 1 teaspoon
- Cornstarch - 1 teaspoon
- Water - 100 ml
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut into 1-inch cubes.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the minced garlic, ginger, and dried red chili peppers to the skillet, stirring for about 30 seconds until fragrant.
- Add the tofu cubes to the skillet, frying until golden brown on all sides, about 5-7 minutes. Remove the tofu and set aside.
- In the same skillet, add the sliced green bell pepper and julienned carrot. Stir-fry for 3-4 minutes until slightly tender.
- Return the tofu to the skillet, then add the soy sauce, rice vinegar, doubanjiang, sugar, and water. Stir well to coat all ingredients.
- Dissolve the cornstarch in a small amount of water and add to the skillet, stirring until the sauce thickens, about 1-2 minutes.
- Stir in the chopped spring onions and cook for an additional minute before serving.
