- Japanese eggplant - 400 grams
- Firm tofu - 200 grams
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, minced
- Green onions - 2, chopped
- Red bell pepper - 1, diced
- Soy sauce - 2 tablespoons
- Chili bean paste - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Sugar - 1 teaspoon
- Sesame oil - 1 teaspoon
- Cornstarch - 1 tablespoon (mixed with 2 tablespoons water)
- Vegetable oil - 2 tablespoons
- Salt - to taste
Steps
- 1. Cut the Japanese eggplant into 1-inch pieces and sprinkle with salt; let it sit for 15 minutes to draw out moisture.
- 2. In a pan, heat 1 tablespoon of vegetable oil over medium heat, add the tofu cubes, and cook until golden brown on all sides. Remove and set aside.
- 3. In the same pan, add the remaining tablespoon of vegetable oil and sauté the minced garlic and ginger until fragrant.
- 4. Add the diced red bell pepper and cook for 2-3 minutes until slightly softened.
- 5. Rinse the salted eggplant under cold water and pat dry. Add it to the pan and stir-fry for about 5 minutes until the eggplant is tender.
- 6. In a small bowl, mix the soy sauce, chili bean paste, rice vinegar, sugar, and sesame oil. Pour this sauce over the eggplant and bell pepper mixture.
- 7. Add the cooked tofu and mix gently to combine. Stir in the cornstarch mixture and cook for another 2-3 minutes until the sauce thickens.
- 8. Garnish with chopped green onions before serving.
