Ingredients

  • Japanese eggplant - 400 grams
  • Firm tofu - 200 grams
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Green onions - 2, chopped
  • Red bell pepper - 1, diced
  • Soy sauce - 2 tablespoons
  • Chili bean paste - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Sugar - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Cornstarch - 1 tablespoon (mixed with 2 tablespoons water)
  • Vegetable oil - 2 tablespoons
  • Salt - to taste

Steps

  1. 1. Cut the Japanese eggplant into 1-inch pieces and sprinkle with salt; let it sit for 15 minutes to draw out moisture.
  2. 2. In a pan, heat 1 tablespoon of vegetable oil over medium heat, add the tofu cubes, and cook until golden brown on all sides. Remove and set aside.
  3. 3. In the same pan, add the remaining tablespoon of vegetable oil and sauté the minced garlic and ginger until fragrant.
  4. 4. Add the diced red bell pepper and cook for 2-3 minutes until slightly softened.
  5. 5. Rinse the salted eggplant under cold water and pat dry. Add it to the pan and stir-fry for about 5 minutes until the eggplant is tender.
  6. 6. In a small bowl, mix the soy sauce, chili bean paste, rice vinegar, sugar, and sesame oil. Pour this sauce over the eggplant and bell pepper mixture.
  7. 7. Add the cooked tofu and mix gently to combine. Stir in the cornstarch mixture and cook for another 2-3 minutes until the sauce thickens.
  8. 8. Garnish with chopped green onions before serving.
