Ingredients

  • White fish fillets (such as cod or tilapia) - 300 grams
  • Coconut milk - 400 ml
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Onion - 1 medium, sliced
  • Bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Broccoli florets - 100 grams
  • Soy sauce - 2 tablespoons
  • Curry powder - 1 tablespoon
  • Turmeric - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Chopped cilantro - for garnish

Steps

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the minced garlic and grated ginger, sauté for about 1 minute until fragrant.
  3. Add the sliced onion and continue to sauté until it becomes translucent, about 3-4 minutes.
  4. Stir in the curry powder and turmeric, cooking for another minute to release the spices' flavors.
  5. Pour in the coconut milk and soy sauce, stirring well to combine.
  6. Add the sliced bell pepper, julienned carrot, and broccoli florets to the skillet, bringing the mixture to a gentle simmer.
  7. Let the vegetables cook for about 5-7 minutes until they are tender but still crisp.
  8. Gently add the fish fillets to the curry, pushing them down into the sauce. Cook for an additional 5-7 minutes, or until the fish is cooked through and flakes easily.
  9. Season with salt and black pepper to taste.
  10. Serve the curry hot, garnished with chopped cilantro.
