Ingredients
- Jasmine rice - 1 cup (200g)
- Shrimp, peeled and deveined - 150g
- White fish fillet (e.g., cod or tilapia) - 150g, cut into bite-sized pieces
- Eggs - 2 large
- Green onions - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Peas - 1/2 cup (75g), frozen or fresh
- Soy sauce - 3 tablespoons (45ml)
- Sesame oil - 1 tablespoon (15ml)
- Vegetable oil - 2 tablespoons (30ml)
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions and let it cool.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and cook for 2-3 minutes until pink and opaque. Remove and set aside.
- In the same skillet, add the fish pieces and cook for about 3-4 minutes until cooked through. Remove and set aside with the shrimp.
- Add the remaining tablespoon of vegetable oil to the skillet. Sauté the minced garlic and chopped green onions for about 1 minute until fragrant.
- Push the garlic and onions to one side of the skillet, then crack the eggs into the other side. Scramble the eggs until fully cooked, then mix with the garlic and onions.
- Add the cooked rice, shrimp, fish, and peas to the skillet. Pour in the soy sauce and sesame oil, stirring well to combine all ingredients. Cook for another 3-4 minutes until heated through.
- Season with salt and black pepper to taste. Serve hot, garnished with additional chopped green onions if desired.
