Ingredients
- Black soybeans - 100g
- Sea salt - 15g
- Water - 500ml
- Ginger - 5g, grated
- Garlic - 2 cloves, minced
- Red chili flakes - 1 tsp
- Rice vinegar - 1 tbsp
Steps
- Rinse the black soybeans under cold water to remove any debris and impurities.
- Soak the beans in 500ml of water for 8-12 hours or overnight to soften them.
- After soaking, drain and rinse the beans again, then place them in a pot with 500ml of fresh water.
- Bring the pot to a boil, then reduce the heat to low and simmer for 30 minutes until the beans are tender.
- Drain the beans and let them cool slightly before transferring them to a clean glass jar.
- In a separate bowl, mix the sea salt, grated ginger, minced garlic, red chili flakes, and rice vinegar.
- Pour the mixture over the beans in the jar, ensuring they are fully covered. You may need to add a little more water if necessary.
- Seal the jar tightly and leave it at room temperature for 3-5 days to ferment, checking daily for flavor and consistency.
- Once fermented to your liking, transfer the jar to the refrigerator and enjoy within 2-3 weeks.
