Ingredients

  • Black soybeans - 100g
  • Sea salt - 15g
  • Water - 500ml
  • Ginger - 5g, grated
  • Garlic - 2 cloves, minced
  • Red chili flakes - 1 tsp
  • Rice vinegar - 1 tbsp

Steps

  1. Rinse the black soybeans under cold water to remove any debris and impurities.
  2. Soak the beans in 500ml of water for 8-12 hours or overnight to soften them.
  3. After soaking, drain and rinse the beans again, then place them in a pot with 500ml of fresh water.
  4. Bring the pot to a boil, then reduce the heat to low and simmer for 30 minutes until the beans are tender.
  5. Drain the beans and let them cool slightly before transferring them to a clean glass jar.
  6. In a separate bowl, mix the sea salt, grated ginger, minced garlic, red chili flakes, and rice vinegar.
  7. Pour the mixture over the beans in the jar, ensuring they are fully covered. You may need to add a little more water if necessary.
  8. Seal the jar tightly and leave it at room temperature for 3-5 days to ferment, checking daily for flavor and consistency.
  9. Once fermented to your liking, transfer the jar to the refrigerator and enjoy within 2-3 weeks.
