Ingredients

  • Glutinous rice - 200 grams
  • Water - 250 milliliters
  • Pickled vegetables (e.g., pickled radish) - 50 grams, chopped
  • Tofu (firm) - 100 grams, sliced into thin strips
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Chopped scallions - 2 tablespoons
  • Nori seaweed sheets - 2 sheets, cut in half
  • Coriander leaves - a handful, for garnish

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a bamboo steamer lined with cheesecloth or a clean kitchen towel for about 30 minutes, until fully cooked and sticky.
  3. While the rice is steaming, marinate the sliced tofu in soy sauce and sesame oil for 15 minutes.
  4. In a non-stick skillet, lightly pan-fry the marinated tofu until golden brown on both sides, about 3-4 minutes per side. Remove from heat.
  5. Once the rice is done, let it cool slightly. Then, take a piece of plastic wrap or parchment paper and spread a thin layer of the sticky rice onto it, forming a rectangle about 1 cm thick.
  6. Place the tofu strips, pickled vegetables, and chopped scallions in the center of the rice rectangle.
  7. Using the plastic wrap, carefully roll the rice over the filling, ensuring it's tightly wrapped. Repeat this process for the other serving.
  8. Cut each roll into bite-sized pieces and serve garnished with fresh coriander leaves. Enjoy!
