- Glutinous rice - 150 grams
- Water - 300 ml
- Red bean paste - 50 grams
- Dried longan - 30 grams
- Dried jujube (red dates) - 30 grams
- Candied lotus seeds - 30 grams
- Chopped walnuts - 20 grams
- Chopped dried apricots - 20 grams
- Shredded coconut - 20 grams
- Maple syrup - 2 tablespoons
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- After soaking, drain the rice and place it in a steaming dish or a heatproof bowl.
- Add 300 ml of water to the steamer, and place the dish with rice into the steamer basket, then cover with a lid.
- Steam the rice over medium heat for about 30 minutes, or until it becomes translucent and sticky.
- While the rice is steaming, prepare the mix-ins: chop the dried longan, jujube, walnuts, and dried apricots into small pieces.
- In a large bowl, combine the steamed rice, red bean paste, dried longan, jujube, candied lotus seeds, walnuts, apricots, and shredded coconut, mixing well.
- Drizzle the maple syrup over the mixture and stir until everything is evenly coated.
- Divide the mixture into two serving bowls, and shape them into compact mounds if desired. You can sprinkle extra coconut on top for garnish.
