Ingredients

  • Eggplant - 300 grams
  • Minced pork - 200 grams
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Spring onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes - 1 teaspoon (optional)

Steps

  1. Wash the eggplant and cut it into 1-inch cubes. Soak in salted water for 10 minutes to reduce bitterness, then drain and pat dry.
  2. Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add the minced pork and cook until browned, about 5-7 minutes. Remove from the pan and set aside.
  3. In the same pan, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, sautéing for 30 seconds until fragrant.
  4. Add the eggplant cubes to the pan and stir-fry for about 5-7 minutes until they are tender and lightly browned.
  5. Return the cooked minced pork to the pan with the eggplant. Add soy sauce, oyster sauce, sesame oil, and chili flakes (if using). Stir well to combine and cook for an additional 3-4 minutes.
  6. Season with salt and black pepper to taste. Stir in the chopped spring onions just before serving.
  7. Serve hot with steamed rice.
