  • Eggplant - 1 large

  • Oyster sauce - 1 tablespoon
  • Mozzarella cheese - 100 grams, shredded
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let them sit for about 10 minutes to draw out excess moisture, then pat dry with a paper towel.
  3. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
  4. Add the ground pork to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  5. Stir in the diced bell pepper, chopped green onions, soy sauce, oyster sauce, black pepper, and chili flakes. Cook for an additional 3-4 minutes until the vegetables are tender.
  6. On a baking sheet lined with parchment paper, arrange the eggplant slices in a single layer. Spoon the pork and vegetable mixture generously onto each eggplant slice.
  7. Top each slice with shredded mozzarella cheese.
  8. Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly.
