Ingredients

  • Eggplant - 1 medium
  • Olive oil - 2 tablespoons
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Mozzarella cheese - 100 grams, shredded
  • Ground pork (or beef) - 100 grams
  • Green bell pepper - 1/2, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Spring onions - 2, chopped
  • Sesame oil - 1 teaspoon
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1.5 cm thick rounds and sprinkle with salt. Let it sit for 10 minutes to draw out moisture.
  3. In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the minced garlic and ginger until fragrant.
  4. Add the ground pork (or beef) to the skillet and cook until browned, about 5-7 minutes. Stir in the diced green bell pepper, soy sauce, sesame oil, red pepper flakes, salt, and black pepper. Cook for an additional 3-4 minutes until the vegetables are tender.
  5. Rinse the eggplant slices under cold water to remove excess salt and pat them dry with a paper towel.
  6. Arrange the eggplant rounds on a baking sheet lined with parchment paper. Brush each round with the remaining tablespoon of olive oil.
  7. Spoon the pork mixture evenly on top of each eggplant round, then sprinkle shredded mozzarella cheese over each.
  8. Bake in the preheated oven for 15-20 minutes, or until the eggplant is tender and the cheese is melted and bubbly.
  9. Sprinkle chopped spring onions on top before serving.
