  • Zucchini - 1 medium (about 200g)
  • Garlic - 3 cloves, minced

  • Soy sauce (or coconut aminos for Keto) - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Begin by preparing the eggplant: slice it lengthwise into thin strips, then cut those strips into noodle-like shapes.
  2. Sprinkle the eggplant noodles with a little salt and let them sit for about 10 minutes to draw out excess moisture.
  3. Rinse the eggplant noodles under cold water and pat them dry with a paper towel.
