- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Sesame seeds - 1 tablespoon

Steps
- Begin by preparing the eggplant. Cut off the ends and slice it lengthwise into thin noodles using a vegetable peeler or spiralizer.
- Sprinkle the eggplant noodles with a little salt and let them sit for about 10 minutes to draw out excess moisture. Rinse and pat dry.
- In a large skillet, heat 1 teaspoon of sesame oil over medium heat. Add the eggplant noodles and sauté for about 5-7 minutes until they are tender but still slightly firm. Remove from heat and let cool.
- While the eggplant is cooling, julienne the cucumber, red bell pepper, and carrot. Chop the green onions.
