  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Begin by preparing the eggplant. Cut off the ends and slice it lengthwise into thin noodles using a vegetable peeler or spiralizer.
  2. Sprinkle the eggplant noodles with a little salt and let them sit for about 10 minutes to draw out excess moisture. Rinse and pat dry.
  3. In a large skillet, heat 1 teaspoon of sesame oil over medium heat. Add the eggplant noodles and sauté for about 5-7 minutes until they are tender but still slightly firm. Remove from heat and let cool.
  4. While the eggplant is cooling, julienne the cucumber, red bell pepper, and carrot. Chop the green onions.

  6. In a large mixing bowl, combine the cooled eggplant noodles, cucumber, red bell pepper, carrot, and green onions. Pour the dressing over the salad and toss well to combine.
