Ingredients
- Eggplant - 1 medium (about 250g)
- Firm tofu - 200g
- Bell pepper (red or yellow) - 1 medium (about 150g)
- Green onions - 2 stalks
- Garlic - 3 cloves
- Ginger - 1 inch piece
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Cornstarch - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
- Peel and slice the eggplant into bite-sized pieces, and chop the bell pepper into strips.
- Mince the garlic and ginger, and slice the green onions, keeping the white and green parts separate.
- In a bowl, toss the tofu cubes with cornstarch, salt, and pepper until evenly coated.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium-high heat. Add the tofu cubes and fry until golden and crispy, about 5-7 minutes. Remove and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the eggplant and stir-fry for about 5 minutes until it starts to soften.
- Add the bell pepper, minced garlic, and ginger to the skillet, and stir-fry for another 3-4 minutes.
- Return the crispy tofu to the skillet, add the soy sauce, and drizzle with sesame oil. Stir well to combine and cook for an additional 2-3 minutes.
- Finally, stir in the white parts of the green onions and cook for another minute before removing from heat.
- Serve hot, garnished with the green parts of the green onions.
