Ingredients

  • Eggplant - 1 medium (about 250g)
  • Firm tofu - 200g
  • Bell pepper (red or yellow) - 1 medium (about 150g)
  • Green onions - 2 stalks
  • Garlic - 3 cloves
  • Ginger - 1 inch piece
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
  2. Peel and slice the eggplant into bite-sized pieces, and chop the bell pepper into strips.
  3. Mince the garlic and ginger, and slice the green onions, keeping the white and green parts separate.
  4. In a bowl, toss the tofu cubes with cornstarch, salt, and pepper until evenly coated.
  5. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium-high heat. Add the tofu cubes and fry until golden and crispy, about 5-7 minutes. Remove and set aside.
  6. In the same skillet, add the remaining tablespoon of vegetable oil. Add the eggplant and stir-fry for about 5 minutes until it starts to soften.
  7. Add the bell pepper, minced garlic, and ginger to the skillet, and stir-fry for another 3-4 minutes.
  8. Return the crispy tofu to the skillet, add the soy sauce, and drizzle with sesame oil. Stir well to combine and cook for an additional 2-3 minutes.
  9. Finally, stir in the white parts of the green onions and cook for another minute before removing from heat.
  10. Serve hot, garnished with the green parts of the green onions.
