Ingredients

  • Halal pork loin - 200 grams, thinly sliced
  • Eggplant - 1 medium (about 250 grams), cut into bite-sized pieces
  • Red bell pepper - 1 medium, sliced
  • Green onion - 2 stalks, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, combine the sliced halal pork with soy sauce, cornstarch, and a pinch of salt and black pepper. Marinate for 10 minutes.
  2. While the pork is marinating, heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the marinated pork to the skillet and stir-fry for about 5-7 minutes, or until the pork is cooked through. Remove the pork from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  5. Add the eggplant and red bell pepper to the skillet. Stir-fry for about 5 minutes, or until the vegetables are tender and the eggplant is lightly browned.
  6. Return the cooked pork to the skillet. Add oyster sauce, sesame oil, and chopped green onions. Stir-fry everything together for an additional 2-3 minutes.
