- Halal pork loin - 200 grams, thinly sliced
- Eggplant - 1 medium (about 250 grams), cut into bite-sized pieces
- Red bell pepper - 1 medium, sliced
- Green onion - 2 stalks, chopped
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Cornstarch - 1 tablespoon
- Sesame oil - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, combine the sliced halal pork with soy sauce, cornstarch, and a pinch of salt and black pepper. Marinate for 10 minutes.
- While the pork is marinating, heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the marinated pork to the skillet and stir-fry for about 5-7 minutes, or until the pork is cooked through. Remove the pork from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
- Add the eggplant and red bell pepper to the skillet. Stir-fry for about 5 minutes, or until the vegetables are tender and the eggplant is lightly browned.
- Return the cooked pork to the skillet. Add oyster sauce, sesame oil, and chopped green onions. Stir-fry everything together for an additional 2-3 minutes.
- Taste and adjust seasoning with salt and pepper if needed. Serve hot over rice or noodles.
