Ingredients

  • Chicken breast - 200 grams
  • Eggplant - 1 medium (about 250 grams)
  • Red bell pepper - 1 medium, diced
  • Cucumber - 1 medium, sliced
  • Spring onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon
  • Cooking oil - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds, sprinkle with salt, and let sit for 10 minutes to draw out moisture.
  3. Rinse the eggplant and pat dry with a paper towel. Place on a baking sheet, drizzle with 1 tablespoon of cooking oil, and roast in the oven for 20 minutes until golden and tender.
  4. While the eggplant is roasting, cut the chicken breast into bite-sized pieces.
  5. Heat the remaining tablespoon of cooking oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  6. Add the chicken pieces to the skillet, season with salt and black pepper, and cook until browned and cooked through (about 7-10 minutes).
  7. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, and honey to make the dressing.
  8. Once the chicken and eggplant are cooked, let them cool slightly. In a large bowl, combine the chicken, roasted eggplant, diced red bell pepper, sliced cucumber, and chopped spring onions.
  9. Drizzle the dressing over the salad, toss gently to combine, and garnish with sesame seeds before serving.
