- Beef (thinly sliced) - 250 grams
- Eggplant (cubed) - 200 grams
- Bell pepper (sliced) - 100 grams
- Onion (sliced) - 50 grams
- Garlic (minced) - 2 cloves
- Ginger (minced) - 1 teaspoon
- Soy sauce (low sodium) - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Cornstarch - 1 tablespoon
- Water - 50 milliliters
- Salt - to taste
- Black pepper - to taste
- Spring onions (for garnish) - 1 tablespoon
Steps
- In a bowl, combine the beef slices with cornstarch, soy sauce, and black pepper. Let it marinate for 10 minutes.
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated beef and stir-fry for about 3-4 minutes until browned. Remove the beef from the pan and set aside.
- In the same pan, add the remaining vegetable oil. Once hot, add the minced garlic and ginger, sautéing for 30 seconds until fragrant.
- Add the cubed eggplant and sliced onion to the pan, stir-frying for about 5-7 minutes until the eggplant is tender and slightly browned.
- Add the sliced bell pepper and continue to stir-fry for another 2-3 minutes.
- Return the cooked beef to the pan, along with oyster sauce, sesame oil, and water. Stir well to combine and cook for an additional 2-3 minutes until everything is evenly coated and heated through.
- Taste and adjust seasoning with salt and pepper as needed. Serve hot, garnished with chopped spring onions.
