Ingredients

  • Beef (thinly sliced) - 250 grams
  • Eggplant (cubed) - 200 grams
  • Bell pepper (sliced) - 100 grams
  • Onion (sliced) - 50 grams
  • Garlic (minced) - 2 cloves
  • Ginger (minced) - 1 teaspoon
  • Soy sauce (low sodium) - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Water - 50 milliliters
  • Salt - to taste
  • Black pepper - to taste
  • Spring onions (for garnish) - 1 tablespoon

Steps

  1. In a bowl, combine the beef slices with cornstarch, soy sauce, and black pepper. Let it marinate for 10 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated beef and stir-fry for about 3-4 minutes until browned. Remove the beef from the pan and set aside.
  3. In the same pan, add the remaining vegetable oil. Once hot, add the minced garlic and ginger, sautéing for 30 seconds until fragrant.
  4. Add the cubed eggplant and sliced onion to the pan, stir-frying for about 5-7 minutes until the eggplant is tender and slightly browned.
  5. Add the sliced bell pepper and continue to stir-fry for another 2-3 minutes.
  6. Return the cooked beef to the pan, along with oyster sauce, sesame oil, and water. Stir well to combine and cook for an additional 2-3 minutes until everything is evenly coated and heated through.
  7. Taste and adjust seasoning with salt and pepper as needed. Serve hot, garnished with chopped spring onions.
