Ingredients

  • All-purpose flour - 100 grams
  • Unsalted butter - 30 grams, softened
  • Powdered sugar - 20 grams
  • Egg yolks - 2 large
  • Honey - 10 grams
  • Milk - 30 ml
  • Salt - a pinch
  • Sesame seeds - 10 grams, for garnish

Steps

  1. In a mixing bowl, combine the all-purpose flour, softened unsalted butter, powdered sugar, and a pinch of salt. Mix until the mixture resembles coarse crumbs.
  2. Add the milk to the flour mixture and knead until a smooth dough forms. Wrap the dough in plastic wrap and refrigerate for 15 minutes.
  3. In another bowl, mix the egg yolks, honey, and a pinch of salt until well combined. This will be the filling for the pastry.
  4. Preheat your oven to 180°C (350°F).
  5. After chilling, roll out the dough on a lightly floured surface to about 3 mm thick. Cut out circles using a cookie cutter or a glass, about 8 cm in diameter.
  6. Place a spoonful of the egg yolk filling in the center of each circle, then fold the dough over the filling, sealing the edges well to prevent leakage.
  7. Arrange the pastries on a baking sheet lined with parchment paper. Brush the tops with a little milk and sprinkle sesame seeds on top.
  8. Bake in the preheated oven for 15-20 minutes or until the pastries are golden brown.
  9. Remove from the oven and let cool slightly before serving.
