Ingredients

  • Almond flour - 100g
  • Coconut oil - 30g, melted
  • Maple syrup - 2 tablespoons
  • Eggs - 2 large
  • Coconut milk - 100ml
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and a pinch of salt. Mix until a dough forms.
  3. Press the dough into two small tartlet pans evenly, covering the bottom and sides. Prick the bottoms with a fork.
  4. Bake the tart crusts in the preheated oven for 10 minutes until lightly golden. Remove and set aside to cool.
  5. In another bowl, whisk together the eggs, coconut milk, vanilla extract, and a pinch of salt until well combined.
  6. Pour the egg mixture into the cooled tart crusts, filling them about 3/4 full.
  7. Bake in the oven for an additional 15-20 minutes, or until the custard is set and slightly golden on top.
  8. Allow the tarts to cool for a few minutes before serving.
