- Almond flour - 100g
- Coconut oil - 30g, melted
- Maple syrup - 2 tablespoons
- Eggs - 2 large
- Coconut milk - 100ml
- Vanilla extract - 1 teaspoon
- Salt - a pinch
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and a pinch of salt. Mix until a dough forms.
- Press the dough into two small tartlet pans evenly, covering the bottom and sides. Prick the bottoms with a fork.
- Bake the tart crusts in the preheated oven for 10 minutes until lightly golden. Remove and set aside to cool.
- In another bowl, whisk together the eggs, coconut milk, vanilla extract, and a pinch of salt until well combined.
- Pour the egg mixture into the cooled tart crusts, filling them about 3/4 full.
- Bake in the oven for an additional 15-20 minutes, or until the custard is set and slightly golden on top.
- Allow the tarts to cool for a few minutes before serving.
