Steps
- In a large skillet or wok, heat the olive oil over medium heat.
- Add the diced carrots and frozen peas, cooking for about 3-4 minutes until slightly tender.
- Push the vegetables to the side of the skillet and crack the eggs into the empty space, scrambling them until fully cooked.
- Add the cooked rice to the skillet, mixing it with the eggs and vegetables.
- Stir in the soy sauce, sesame oil, chopped green onions, salt, and black pepper, ensuring everything is well combined and heated through.
