  • Green peas - 1/4 cup (40g)
  • Carrot - 1/4 cup, diced (30g)
  • Green onions - 2 stalks, chopped
  • Soy sauce - 1 tablespoon (15ml)
  • Sesame oil - 1 teaspoon (5ml)
  • Olive oil - 1 tablespoon (15ml)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large non-stick skillet or wok over medium heat.
  2. Add the diced carrot and green peas to the skillet, stirring for about 3-4 minutes until they are tender.
  3. Push the vegetables to one side of the skillet and crack the eggs into the empty side. Scramble the eggs until fully cooked.
  4. Add the cooked jasmine rice to the skillet, mixing it thoroughly with the vegetables and eggs.
  5. Pour the soy sauce and sesame oil over the rice mixture, stirring well to combine all the ingredients.
