Ingredients

  • Eggs - 4 large
  • Egg Noodles - 200 grams
  • Spring Onions - 3, finely chopped
  • Bell Pepper - 1 small, diced
  • Carrot - 1 small, julienned
  • Soy Sauce - 2 tablespoons
  • Sesame Oil - 1 tablespoon
  • Vegetable Oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Salt - to taste
  • Black Pepper - to taste

Steps

  1. Boil the egg noodles in salted water according to package instructions until al dente, then drain and set aside.
  2. In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium heat.
  3. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the diced bell pepper and julienned carrot to the skillet, stir-frying for about 2-3 minutes until slightly tender.
  5. Push the vegetables to one side of the skillet and crack the eggs into the other side, scrambling them until fully cooked.
  6. Combine the cooked noodles with the scrambled eggs and vegetables in the skillet.
  7. Add soy sauce, sesame oil, chopped spring onions, salt, and black pepper, stirring well to combine all ingredients evenly.
  8. Cook for an additional 2-3 minutes, stirring frequently, until everything is heated through and well mixed.
