- Large eggs - 4
- Green onions - 3, finely chopped
- Mushrooms - 100 grams, finely chopped
- Bell pepper - 50 grams, finely chopped
- Bean sprouts - 50 grams
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons for frying
Steps
- In a mixing bowl, crack the eggs and whisk them together until well combined.
- Add in the chopped green onions, mushrooms, bell pepper, bean sprouts, soy sauce, sesame oil, salt, and black pepper. Mix until all ingredients are evenly distributed.
- Heat 1 tablespoon of olive oil in a non-stick frying pan over medium heat.
- Pour half of the egg mixture into the pan, spreading it evenly. Cook for about 3-4 minutes until the edges start to set.
- Carefully flip the omelette and cook for another 2-3 minutes until fully cooked. Remove from the pan and keep warm.
- Repeat the process with the remaining egg mixture, adding another tablespoon of olive oil if necessary.
- Serve hot, garnished with additional green onions if desired.
