Ingredients

  • Large eggs - 4
  • Green onions - 3, finely chopped
  • Mushrooms - 100 grams, finely chopped
  • Bell pepper - 50 grams, finely chopped
  • Bean sprouts - 50 grams
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons for frying

Steps

  1. In a mixing bowl, crack the eggs and whisk them together until well combined.
  2. Add in the chopped green onions, mushrooms, bell pepper, bean sprouts, soy sauce, sesame oil, salt, and black pepper. Mix until all ingredients are evenly distributed.
  3. Heat 1 tablespoon of olive oil in a non-stick frying pan over medium heat.
  4. Pour half of the egg mixture into the pan, spreading it evenly. Cook for about 3-4 minutes until the edges start to set.
  5. Carefully flip the omelette and cook for another 2-3 minutes until fully cooked. Remove from the pan and keep warm.
  6. Repeat the process with the remaining egg mixture, adding another tablespoon of olive oil if necessary.
  7. Serve hot, garnished with additional green onions if desired.
