Ingredients

  • Cauliflower - 400 grams
  • Eggs - 4 large
  • Green onions - 2 stalks, chopped
  • Carrots - 50 grams, diced
  • Frozen peas - 50 grams
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Oil for cooking - 1 tablespoon

Steps

  1. Begin by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower, and cut it into florets. Pulse the florets in a food processor until they resemble rice grains.
  2. Heat the oil in a large skillet or wok over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the diced carrots and frozen peas to the skillet and stir-fry for 2-3 minutes until the vegetables are tender.
  4. Add the cauliflower rice to the skillet and stir to combine with the vegetables. Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender and slightly golden.
  5. In a bowl, whisk together the eggs, soy sauce, salt, and black pepper.
  6. Push the cauliflower rice mixture to one side of the skillet, then pour the egg mixture into the other side. Allow the eggs to sit for a few seconds, then scramble until just cooked through.
  7. Combine the scrambled eggs with the cauliflower rice and vegetables. Drizzle with sesame oil and toss everything together.
  8. Garnish with chopped green onions before serving.
