- all-purpose flour - 100 grams
- unsalted butter - 50 grams
- granulated sugar - 20 grams
- cold water - 30 milliliters
- large eggs - 2
- egg whites - 1
- milk - 200 milliliters
- vanilla extract - 1 teaspoon
- cornstarch - 10 grams
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, combine the all-purpose flour and granulated sugar, then cut in the unsalted butter until the mixture resembles coarse crumbs.
- Add the cold water gradually, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
- Roll out the chilled dough on a lightly floured surface and fit it into a 20 cm tart pan, trimming any excess. Prick the bottom with a fork.
- Line the pastry with parchment paper, fill with baking weights, and bake for 15 minutes. Remove the weights and paper, then bake for an additional 5 minutes until lightly golden.
- In a bowl, whisk together the whole eggs, egg white, milk, sugar, vanilla extract, and cornstarch until smooth.
- Pour the custard mixture into the baked tart shell and gently tap to remove air bubbles.
- Bake in the preheated oven for 20-25 minutes or until the custard is set and slightly jiggly in the center.
- Remove from the oven and allow to cool slightly before refrigerating for at least 1 hour before serving.
