  • Century eggs - 2 large
  • Eggs - 2 large
  • Chicken broth - 500 ml
  • Spring onion - 2 stalks, chopped
  • Sesame oil - 1 tablespoon
  • Soy sauce (low sodium) - 1 tablespoon
  • Salt - to taste
  • White pepper - to taste
  • Ginger (fresh, grated) - 1 teaspoon

Steps

  1. In a pot, bring the chicken broth to a gentle boil over medium heat.
  2. Add the cauliflower rice to the boiling broth and cook for about 10 minutes, stirring occasionally until tender.
  3. While the cauliflower rice is cooking, peel and chop the century eggs into small pieces.
  4. In a separate bowl, whisk the two large eggs and season with a pinch of salt and white pepper.
  5. After the cauliflower rice is tender, slowly stir in the whisked eggs, allowing them to cook and create ribbons in the porridge.
