- Duck breast - 300 grams
- Chicken broth - 500 ml
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Mushrooms (shiitake or button) - 100 grams, sliced
- Pak choi (bok choy) - 100 grams, chopped
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Green onions - 2, chopped
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Water - 200 ml
Steps
- Heat sesame oil in a pot over medium heat. Add minced ginger and garlic, sautéing until fragrant (about 1 minute).
- Add the duck breast to the pot, cooking until browned on both sides (about 5 minutes).
- Pour in the chicken broth and water, bringing the mixture to a boil.
- Reduce the heat and let the soup simmer for 15 minutes, skimming off any foam that rises to the surface.
- Remove the duck breast from the pot and let it rest for a few minutes before slicing it thinly.
- Return the sliced duck to the pot, and add the sliced mushrooms, chopped pak choi, soy sauce, black pepper, and salt to taste.
- Simmer for an additional 10 minutes until the vegetables are tender.
- Serve hot, garnished with chopped green onions.
