Ingredients

  • Duck breast - 300 grams
  • Chicken broth - 500 ml
  • Ginger - 1 tablespoon, minced
  • Garlic - 2 cloves, minced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Pak choi (bok choy) - 100 grams, chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Water - 200 ml

Steps

  1. Heat sesame oil in a pot over medium heat. Add minced ginger and garlic, sautéing until fragrant (about 1 minute).
  2. Add the duck breast to the pot, cooking until browned on both sides (about 5 minutes).
  3. Pour in the chicken broth and water, bringing the mixture to a boil.
  4. Reduce the heat and let the soup simmer for 15 minutes, skimming off any foam that rises to the surface.
  5. Remove the duck breast from the pot and let it rest for a few minutes before slicing it thinly.
  6. Return the sliced duck to the pot, and add the sliced mushrooms, chopped pak choi, soy sauce, black pepper, and salt to taste.
  7. Simmer for an additional 10 minutes until the vegetables are tender.
  8. Serve hot, garnished with chopped green onions.
