Ingredients
- Sticky rice - 200 grams
- Shiitake mushrooms, dried - 30 grams
- Cooked chicken breast, shredded - 100 grams
- Green onions, chopped - 2 tablespoons
- Fresh ginger, grated - 1 teaspoon
- Coconut aminos - 2 tablespoons
- Sesame oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Banana leaves or parchment paper - for wrapping
Steps
- Soak the sticky rice in water for at least 4 hours or overnight, then drain.
- Soak the dried shiitake mushrooms in warm water for about 30 minutes until softened, then drain and slice them.
- In a skillet, heat the sesame oil over medium heat, add the grated ginger, and sauté for 1 minute until fragrant.
- Add the sliced mushrooms and shredded chicken to the skillet, stir in the coconut aminos, salt, and black pepper, and cook for about 5 minutes until heated through.
- In a large bowl, mix the soaked sticky rice with the mushroom and chicken filling, and add the chopped green onions.
- Prepare the banana leaves or parchment paper by cutting into squares, about 25 cm x 25 cm.
- Place a generous scoop of the sticky rice mixture in the center of each square, fold the sides over, and wrap tightly, securing with kitchen twine if necessary.
- In a large pot, bring water to a boil and place a steaming rack inside. Arrange the wrapped dumplings on the rack, cover, and steam for 40 minutes.
- After steaming, remove the dumplings from the pot and let them sit for a few minutes before unwrapping.
- Serve warm, garnished with additional green onions if desired.
