Douhua, also known as silken tofu pudding, is a traditional Chinese breakfast dish that is both light and nutritious, often enjoyed with a variety of sweet or savory toppings. This Halal version is simple to prepare and offers a delicate texture that melts in your mouth.

Ingredients

  • Soybeans - 100 grams
  • Water - 1 liter
  • Calcium sulfate - 3 grams
  • Sugar - 30 grams
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Chopped green onions - 2 tablespoons
  • Chili oil - 1 teaspoon (optional)
  • Coriander leaves - for garnish

Steps

  1. Soak the soybeans in water overnight or for at least 8 hours.
  2. Drain and rinse the soaked soybeans, then blend them with 1 liter of fresh water until smooth.
  3. Strain the blended mixture through a cheesecloth or fine sieve to separate the soy milk from the soybean pulp, pressing to extract as much liquid as possible.
  4. Pour the soy milk into a saucepan and heat over medium heat until it just begins to simmer, stirring occasionally.
  5. Dissolve the calcium sulfate in a small amount of warm water, then slowly add it to the hot soy milk while gently stirring.
  6. Remove the saucepan from heat and cover it with a lid. Let it sit undisturbed for about 15-20 minutes to allow the tofu to set.
  7. Once set, carefully transfer the douhua to serving bowls.
  8. Combine the soy sauce, sugar, and sesame oil in a small bowl to create a dressing.
  9. Drizzle the dressing over the douhua, and garnish with chopped green onions, coriander leaves, and chili oil if desired.
