Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Doubanjiang (fermented broad bean paste) - 2 tablespoons
  • Soy sauce (gluten-free) - 1 tablespoon
  • Rice wine - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, minced
  • Scallions - 2, chopped
  • Sesame oil - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Bell pepper - 1, sliced
  • Water - 100 milliliters

Steps

  1. In a bowl, combine the chicken thighs with doubanjiang, soy sauce, rice wine, minced garlic, and minced ginger. Marinate for at least 15 minutes.
  2. Heat vegetable oil in a large pan over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes until browned on all sides.
  3. Add the sliced bell pepper to the pan and stir-fry for another 3 minutes until slightly softened.
  4. Pour in the water and bring to a simmer. Cover the pan and let it cook for an additional 5 minutes until the chicken is fully cooked through.
  5. Drizzle sesame oil over the dish and stir well. Garnish with chopped scallions before serving.
