Ingredients
- Noodles (preferably wheat or rice) - 200g
- Sesame paste (tahini) - 2 tbsp
- Soy sauce - 2 tbsp
- Chili oil - 1 tbsp
- Rice vinegar - 1 tbsp
- Sugar - 1 tsp
- Garlic - 2 cloves, minced
- Ginger - 1 tsp, minced
- Green onion - 2 stalks, chopped
- Cucumber - 1 small, julienned
- Carrot - 1 small, julienned
- Crushed peanuts - 2 tbsp
- Fresh cilantro - 2 tbsp, chopped
Steps
- Cook the noodles according to the package instructions until al dente, then drain and set aside.
- In a small bowl, combine sesame paste, soy sauce, chili oil, rice vinegar, and sugar. Mix well to create the sauce.
- In a large pan or skillet, heat a small amount of oil over medium heat. Add the minced garlic and ginger, and sauté for about 1-2 minutes until fragrant.
- Add the cooked noodles to the pan and pour the sauce over them. Toss well to coat the noodles evenly and heat through for another 2-3 minutes.
- Remove from heat and serve the noodles in bowls, topped with julienned cucumber, carrot, chopped green onion, crushed peanuts, and fresh cilantro.
