Ingredients

  • Noodles (preferably wheat or rice) - 200g
  • Sesame paste (tahini) - 2 tbsp
  • Soy sauce - 2 tbsp
  • Chili oil - 1 tbsp
  • Rice vinegar - 1 tbsp
  • Sugar - 1 tsp
  • Garlic - 2 cloves, minced
  • Ginger - 1 tsp, minced
  • Green onion - 2 stalks, chopped
  • Cucumber - 1 small, julienned
  • Carrot - 1 small, julienned
  • Crushed peanuts - 2 tbsp
  • Fresh cilantro - 2 tbsp, chopped

Steps

  1. Cook the noodles according to the package instructions until al dente, then drain and set aside.
  2. In a small bowl, combine sesame paste, soy sauce, chili oil, rice vinegar, and sugar. Mix well to create the sauce.
  3. In a large pan or skillet, heat a small amount of oil over medium heat. Add the minced garlic and ginger, and sauté for about 1-2 minutes until fragrant.
  4. Add the cooked noodles to the pan and pour the sauce over them. Toss well to coat the noodles evenly and heat through for another 2-3 minutes.
  5. Remove from heat and serve the noodles in bowls, topped with julienned cucumber, carrot, chopped green onion, crushed peanuts, and fresh cilantro.
