Ingredients

  • Whole wheat noodles - 150 grams
  • Sesame paste - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Chili oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Spring onions - 2, finely chopped
  • Cucumber - 1 small, julienned
  • Carrot - 1 small, julienned
  • Toasted sesame seeds - 1 tablespoon
  • Fresh cilantro - a handful, chopped
  • Water - 500 ml

Steps

  1. Cook the whole wheat noodles according to the package instructions in boiling water. Drain and set aside.
  2. In a mixing bowl, combine sesame paste, soy sauce, rice vinegar, chili oil, minced garlic, and grated ginger. Mix well to form a sauce.
  3. In a large bowl, combine the cooked noodles with the sauce, tossing to coat evenly.
  4. Add the julienned cucumber, carrot, and half of the chopped spring onions to the noodles and toss lightly.
  5. Serve the noodles in bowls, garnishing with the remaining spring onions, toasted sesame seeds, and fresh cilantro.
