Ingredients
- All-purpose flour - 100g
- Water - 120ml
- Eggs - 3 large
- Spring onions - 2, finely chopped
- Carrot - 1 small, grated
- Bell pepper - 1/2, diced
- Soy sauce - 1 tbsp
- Sesame oil - 1 tsp
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Olive oil - 1 tbsp
- Lettuce leaves - 2
- Cucumber - 1/2, sliced
Steps
- In a bowl, mix the all-purpose flour and water until you get a smooth batter. Let it rest for 10 minutes.
- In another bowl, whisk 3 eggs, then mix in chopped spring onions, grated carrot, diced bell pepper, soy sauce, sesame oil, salt, and black pepper.
- Heat a non-stick skillet over medium heat and add a little olive oil. Pour in a ladle of the batter to form a thin pancake, cooking until the edges lift slightly and the bottom is golden, about 2-3 minutes.
- Flip the pancake and pour a portion of the egg mixture on top. Cook until the eggs are set, about 2-3 more minutes. Remove from the pan and repeat with the remaining batter and egg mixture to make a total of 2 pancakes.
- Assemble the burgers by placing a pancake on a plate, adding lettuce and cucumber slices, then topping with the second pancake. Serve warm.
