Ingredients

  • All-purpose flour - 100g
  • Water - 120ml
  • Eggs - 3 large
  • Spring onions - 2, finely chopped
  • Carrot - 1 small, grated
  • Bell pepper - 1/2, diced
  • Soy sauce - 1 tbsp
  • Sesame oil - 1 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Olive oil - 1 tbsp
  • Lettuce leaves - 2
  • Cucumber - 1/2, sliced

Steps

  1. In a bowl, mix the all-purpose flour and water until you get a smooth batter. Let it rest for 10 minutes.
  2. In another bowl, whisk 3 eggs, then mix in chopped spring onions, grated carrot, diced bell pepper, soy sauce, sesame oil, salt, and black pepper.
  3. Heat a non-stick skillet over medium heat and add a little olive oil. Pour in a ladle of the batter to form a thin pancake, cooking until the edges lift slightly and the bottom is golden, about 2-3 minutes.
  4. Flip the pancake and pour a portion of the egg mixture on top. Cook until the eggs are set, about 2-3 more minutes. Remove from the pan and repeat with the remaining batter and egg mixture to make a total of 2 pancakes.
  5. Assemble the burgers by placing a pancake on a plate, adding lettuce and cucumber slices, then topping with the second pancake. Serve warm.
