- All-purpose flour - 100 grams
- Water - 250 ml
- Eggs - 2 large
- Green onion - 2 stalks, finely chopped
- Carrot - 1 small, grated
- Bell pepper - 1/2, diced
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - for frying
Steps
- In a mixing bowl, combine the all-purpose flour, water, salt, and black pepper to form a smooth batter.
- Add the eggs to the batter and whisk until well-blended.
- Stir in the chopped green onion, grated carrot, and diced bell pepper into the batter.
- Heat a non-stick frying pan over medium heat and add a little vegetable oil.
- Pour a ladleful of the batter into the pan, swirling to coat the bottom evenly. Cook for about 2-3 minutes until the edges start to lift.
- Carefully flip the crepe and cook for another 2-3 minutes until golden brown.
- Remove the crepe and keep it warm. Repeat with the remaining batter, adding more oil as needed.
- Drizzle soy sauce and sesame oil over each crepe before serving, and roll them up or fold them as desired.
