Ingredients

  • All-purpose flour - 250 grams
  • Granulated sugar - 50 grams
  • Instant yeast - 5 grams
  • Non-dairy milk (almond or oat) - 120 ml
  • Coconut oil (melted) - 30 grams
  • Salt - 2 grams
  • Pineapple jam - 80 grams
  • Brown sugar - 30 grams
  • Vegetable shortening - 30 grams
  • Baking powder - 3 grams
  • Powdered sugar - 20 grams
  • Vanilla extract - 1 teaspoon

Steps

  1. In a large mixing bowl, combine the all-purpose flour, granulated sugar, instant yeast, and salt.
  2. In a separate bowl, mix the non-dairy milk and melted coconut oil until well combined.
  3. Pour the wet ingredients into the dry ingredients and knead until a smooth dough forms, about 5-7 minutes.
  4. Cover the dough with a damp cloth and let it rise in a warm place for about 30 minutes or until doubled in size.
  5. While the dough is rising, prepare the topping by mixing the vegetable shortening, brown sugar, powdered sugar, baking powder, and vanilla extract in a bowl until smooth.
  6. Once the dough has risen, punch it down and divide it into 4 equal pieces. Shape each piece into a ball and let them rest for 10 minutes.
  7. Flatten each ball slightly and place about 20 grams of pineapple jam in the center. Pinch the edges to seal and shape them back into balls.
  8. Preheat the oven to 180°C (350°F).
  9. Place the filled buns seam-side down on a baking sheet lined with parchment paper.
  10. Spread the topping mixture on top of each bun, smoothing it out with a spatula.
  11. Bake for 15-20 minutes or until the buns are lightly golden brown.
  12. Remove from the oven and let cool slightly before serving.
