- active dry yeast - 5 grams
- sugar - 30 grams
- water - 120 ml
- vegetable oil - 20 grams
- salt - 2 grams
- lotus seed paste - 100 grams
- cornstarch - for dusting
Steps
- In a small bowl, mix warm water with active dry yeast and 10 grams of sugar. Let it sit for 10 minutes until frothy.
- In a large bowl, combine all-purpose flour, remaining sugar, and salt. Make a well in the center and add the yeast mixture and vegetable oil.
- Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 45 minutes, or until doubled in size.
- Once risen, punch down the dough and divide it into 4 equal pieces. Roll each piece into a ball and flatten it into a disc.
- Place a tablespoon of lotus seed paste in the center of each disc, then fold the edges over the filling and pinch to seal.
- Place the filled buns seam-side down on a parchment-lined baking tray, cover with a cloth, and let them rise for another 20 minutes.
- Preheat the oven to 180°C (350°F).
- Bake the buns for 15-20 minutes until they are lightly golden brown.
- Remove from the oven and let cool slightly before serving.
