Ingredients

  • Firm tofu - 300 grams
  • Vegetable oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Bell pepper - 1 medium, diced
  • Carrot - 1 medium, sliced
  • Coconut milk - 200 milliliters
  • Curry powder - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - 2, chopped for garnish
  • Fresh cilantro - for garnish

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
  2. Heat vegetable oil in a large skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  3. Stir in the minced garlic and ginger, and cook for another 1-2 minutes until fragrant.
  4. Add the diced bell pepper and sliced carrot to the skillet and sauté for 5 minutes until they start to soften.
  5. Add the cubed tofu to the skillet and cook for 4-5 minutes, gently stirring to brown the tofu on all sides.
  6. Sprinkle the curry powder over the tofu and vegetables, stirring well to coat everything evenly.
  7. Pour in the coconut milk and soy sauce, stirring to combine. Season with salt and black pepper to taste.
  8. Bring the mixture to a gentle simmer and cook for another 10 minutes, allowing the flavors to meld and the sauce to thicken.
  9. Remove from heat and garnish with chopped green onions and fresh cilantro before serving.
