- All-purpose flour - 200 grams
- Salt - 1/2 teaspoon
- Vegetable oil - 80 milliliters
- Water - 60 milliliters (cold)
- Potatoes - 300 grams (peeled and diced)
- Onion - 1 small (finely chopped)
- Garlic - 2 cloves (minced)
- Ginger - 1 teaspoon (grated)
- Curry powder - 1 tablespoon
- Turmeric powder - 1/2 teaspoon
- Cilantro - 2 tablespoons (chopped)
- Salt - to taste
- Black pepper - to taste
- Oil - for frying (optional)
Steps
- In a mixing bowl, combine the all-purpose flour and 1/2 teaspoon of salt. Gradually add vegetable oil and cold water, mixing until a dough forms. Knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
- While the dough is resting, cook the diced potatoes in boiling water until tender, about 15 minutes. Drain and mash the potatoes in a bowl.
- In a skillet, heat a little oil over medium heat. Add the chopped onion, cooking until translucent, about 5 minutes. Then add the minced garlic and grated ginger, and sauté for another minute.
- Stir in the curry powder, turmeric, and cooked potatoes. Mix well, season with salt and black pepper to taste, and fold in the chopped cilantro. Let the filling cool.
- Preheat the oven to 200°C (390°F).
- Divide the rested dough into two equal portions. Roll each portion into a circle about 3mm thick. Place half of the potato filling on one half of each circle, leaving some space at the edges.
- Fold the other half of the dough over the filling and press the edges to seal. You can crimp the edges with a fork for a decorative touch.
- Place the pastries on a baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes until golden brown.
