Ingredients

  • All-purpose flour - 200 grams
  • Salt - 1/2 teaspoon
  • Vegetable oil - 80 milliliters
  • Water - 60 milliliters (cold)
  • Potatoes - 300 grams (peeled and diced)
  • Onion - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Ginger - 1 teaspoon (grated)
  • Curry powder - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Cilantro - 2 tablespoons (chopped)
  • Salt - to taste
  • Black pepper - to taste
  • Oil - for frying (optional)

Steps

  1. In a mixing bowl, combine the all-purpose flour and 1/2 teaspoon of salt. Gradually add vegetable oil and cold water, mixing until a dough forms. Knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
  2. While the dough is resting, cook the diced potatoes in boiling water until tender, about 15 minutes. Drain and mash the potatoes in a bowl.
  3. In a skillet, heat a little oil over medium heat. Add the chopped onion, cooking until translucent, about 5 minutes. Then add the minced garlic and grated ginger, and sauté for another minute.
  4. Stir in the curry powder, turmeric, and cooked potatoes. Mix well, season with salt and black pepper to taste, and fold in the chopped cilantro. Let the filling cool.
  5. Preheat the oven to 200°C (390°F).
  6. Divide the rested dough into two equal portions. Roll each portion into a circle about 3mm thick. Place half of the potato filling on one half of each circle, leaving some space at the edges.
  7. Fold the other half of the dough over the filling and press the edges to seal. You can crimp the edges with a fork for a decorative touch.
  8. Place the pastries on a baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes until golden brown.
