Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for about 15 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and ginger, and sauté until the onion is translucent.
- Add the diced chicken breast to the pot, season with salt and black pepper, and cook until the chicken is browned all over.
- Stir in the curry powder and cook for an additional minute to release its flavors.
- Pour in the coconut milk and soy sauce, then add the sliced bell pepper and green peas. Simmer for 10 minutes, allowing the sauce to thicken.
- While the curry simmers, drain the soaked rice and add it to a separate pot with 300 ml of water. Bring to a boil, then reduce heat to low, cover, and cook for 15 minutes or until the rice is tender and the water is absorbed.
- Once the chicken curry is ready, fluff the rice with a fork and serve it on plates, topped with the curry. Garnish with fresh cilantro.
