Ingredients

  • Chicken breast - 300 grams, diced
  • Jasmine rice - 150 grams
  • Coconut milk - 200 ml
  • Curry powder - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Soy sauce - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Onion - 1 medium, chopped
  • Bell pepper - 1 medium, sliced
  • Green peas - 100 grams, frozen
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for about 15 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and ginger, and sauté until the onion is translucent.
  3. Add the diced chicken breast to the pot, season with salt and black pepper, and cook until the chicken is browned all over.
  4. Stir in the curry powder and cook for an additional minute to release its flavors.
  5. Pour in the coconut milk and soy sauce, then add the sliced bell pepper and green peas. Simmer for 10 minutes, allowing the sauce to thicken.
  6. While the curry simmers, drain the soaked rice and add it to a separate pot with 300 ml of water. Bring to a boil, then reduce heat to low, cover, and cook for 15 minutes or until the rice is tender and the water is absorbed.
  7. Once the chicken curry is ready, fluff the rice with a fork and serve it on plates, topped with the curry. Garnish with fresh cilantro.
