Ingredients
- All-purpose flour - 200 grams
- Unsalted butter - 100 grams (cold, cubed)
- Cold water - 50 ml
- Salt - 1/2 teaspoon
- Ground chicken - 150 grams
- Onion - 1 small (finely chopped)
- Garlic - 2 cloves (minced)
- Ginger - 1 teaspoon (grated)
- Curry powder - 1 tablespoon
- Coconut milk - 50 ml
- Green peas - 50 grams (frozen or fresh)
- Coriander - 1 tablespoon (chopped)
- Salt - to taste
- Black pepper - to taste
- Egg - 1 (beaten, for egg wash)
Steps
- In a mixing bowl, combine all-purpose flour and salt. Add cold, cubed butter and mix until the mixture resembles coarse crumbs.
- Gradually add cold water, mixing until a dough forms. Shape into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
- In a skillet, heat a bit of oil over medium heat. Sauté chopped onions until translucent, then add minced garlic and grated ginger. Cook for another minute.
- Add ground chicken to the skillet and cook until browned. Stir in curry powder, coconut milk, and green peas. Cook for 5-7 minutes until the mixture thickens. Season with salt, pepper, and chopped coriander. Allow to cool.
- Preheat your oven to 200°C (400°F). Roll out the chilled dough on a floured surface to about 3mm thick.
- Cut the dough into squares (about 10x10 cm). Place a spoonful of the chicken curry mixture in the center of each square.
- Fold the dough over to form a triangle and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
- Brush the tops of the puffs with beaten egg for a golden finish. Place on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes or until golden brown. Serve warm.
