Ingredients

  • All-purpose flour - 200 grams
  • Unsalted butter - 100 grams (cold, cubed)
  • Cold water - 50 ml
  • Salt - 1/2 teaspoon
  • Ground chicken - 150 grams
  • Onion - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Ginger - 1 teaspoon (grated)
  • Curry powder - 1 tablespoon
  • Coconut milk - 50 ml
  • Green peas - 50 grams (frozen or fresh)
  • Coriander - 1 tablespoon (chopped)
  • Salt - to taste
  • Black pepper - to taste
  • Egg - 1 (beaten, for egg wash)

Steps

  1. In a mixing bowl, combine all-purpose flour and salt. Add cold, cubed butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add cold water, mixing until a dough forms. Shape into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
  3. In a skillet, heat a bit of oil over medium heat. Sauté chopped onions until translucent, then add minced garlic and grated ginger. Cook for another minute.
  4. Add ground chicken to the skillet and cook until browned. Stir in curry powder, coconut milk, and green peas. Cook for 5-7 minutes until the mixture thickens. Season with salt, pepper, and chopped coriander. Allow to cool.
  5. Preheat your oven to 200°C (400°F). Roll out the chilled dough on a floured surface to about 3mm thick.
  6. Cut the dough into squares (about 10x10 cm). Place a spoonful of the chicken curry mixture in the center of each square.
  7. Fold the dough over to form a triangle and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
  8. Brush the tops of the puffs with beaten egg for a golden finish. Place on a baking sheet lined with parchment paper.
  9. Bake in the preheated oven for 20-25 minutes or until golden brown. Serve warm.
