Ingredients

  • Beef sirloin - 250 grams, thinly sliced
  • Basmati rice - 150 grams
  • Coconut milk - 200 ml
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Curry powder - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Green bell pepper - 1, sliced
  • Carrot - 1 medium, julienned
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a large pan, heat the vegetable oil over medium heat, then add the diced onion, cooking until translucent (about 3-4 minutes).
  3. Add the minced garlic and grated ginger to the pan, stirring for an additional minute until fragrant.
  4. Incorporate the sliced beef into the pan, browning it for about 5-6 minutes, then season with salt and black pepper.
  5. Sprinkle the curry powder over the beef, stirring well to coat the meat evenly.
  6. Pour in the coconut milk and soy sauce, and add the sliced green bell pepper and julienned carrot. Let it simmer for about 10 minutes.
  7. While the beef mixture simmers, drain the soaked rice and cook it in a pot with 300 ml of water. Bring to a boil, then cover and reduce to low heat for about 12-15 minutes or until the rice is fluffy and the water is absorbed.
  8. Serve the beef curry over the cooked rice and garnish with fresh coriander.
