- Curry powder - 2 tablespoons
- Soy sauce - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Green bell pepper - 1, sliced
- Carrot - 1 medium, julienned
- Salt - to taste
- Black pepper - to taste
- Fresh coriander - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a large pan, heat the vegetable oil over medium heat, then add the diced onion, cooking until translucent (about 3-4 minutes).
- Add the minced garlic and grated ginger to the pan, stirring for an additional minute until fragrant.
- Incorporate the sliced beef into the pan, browning it for about 5-6 minutes, then season with salt and black pepper.
- Sprinkle the curry powder over the beef, stirring well to coat the meat evenly.
- Pour in the coconut milk and soy sauce, and add the sliced green bell pepper and julienned carrot. Let it simmer for about 10 minutes.
- While the beef mixture simmers, drain the soaked rice and cook it in a pot with 300 ml of water. Bring to a boil, then cover and reduce to low heat for about 12-15 minutes or until the rice is fluffy and the water is absorbed.
- Serve the beef curry over the cooked rice and garnish with fresh coriander.
