- Coconut milk - 200 ml
- Salt - to taste

Steps
- In a large pot, heat the vegetable oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
- Add sliced carrots and bell pepper to the pot, cooking for another 5 minutes until slightly softened.
- Cut the beef brisket into bite-sized pieces and season with salt and pepper. Add the brisket to the pot, browning on all sides for about 5-7 minutes.
- Sprinkle curry powder over the brisket and vegetables, stirring well to coat everything evenly.
- Pour in the soy sauce, beef broth, and coconut milk. Bring to a simmer, then cover and reduce heat to low.
- Let the brisket cook for about 60 minutes, or until the meat is tender, stirring occasionally.
- Once cooked, taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro.
