Steps

  1. In a large pot, heat the vegetable oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Add sliced carrots and bell pepper to the pot, cooking for another 5 minutes until slightly softened.
