  • Cumin powder - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Brown sugar - 1 teaspoon
  • Red chili flakes - 1/2 teaspoon (optional)
  • Spring onions - 2, chopped
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Begin by washing the zucchinis thoroughly. Cut them into 1 cm thick slices.
  2. In a medium bowl, combine the cumin powder, soy sauce, sesame oil, minced garlic, grated ginger, brown sugar, and red chili flakes (if using). Mix well to create a marinade.
  3. Add the zucchini slices to the marinade, ensuring they are evenly coated. Let them marinate for at least 15 minutes.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Once hot, place the marinated zucchini slices on the grill. Cook for about 3-4 minutes on each side, or until they are tender and have nice grill marks.

  7. Serve immediately, enjoying the smoky and spiced flavors.
