Ingredients

  • Potatoes - 400 grams
  • Cumin seeds - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onions - 2, chopped
  • Red chili flakes - 1/2 teaspoon
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable oil - 2 tablespoons

Steps

  1. Peel and dice the potatoes into 1-inch cubes and soak them in cold water for 10 minutes to remove excess starch.
  2. In a dry skillet, toast the cumin seeds over medium heat until fragrant, about 2 minutes. Remove from heat and crush them slightly with a mortar and pestle or the back of a spoon.
  3. In a large frying pan or wok, heat the vegetable oil over medium-high heat. Drain the potatoes and add them to the pan, cooking for about 10-12 minutes, stirring occasionally, until they are golden brown and tender.
  4. Add the minced garlic, ginger, and toasted cumin seeds to the pan, stirring well to combine. Cook for an additional 2-3 minutes until fragrant.
  5. Stir in the ground cumin, red chili flakes, soy sauce, sesame oil, and season with salt and black pepper to taste. Cook for another 2-3 minutes, allowing the flavors to meld.
  6. Remove from heat and garnish with chopped green onions before serving.
