Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Ground cumin - 2 teaspoons
  • Ground coriander - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Red chili flakes - 1 teaspoon (optional)
  • Green onions - 2 stalks, chopped (for garnish)
  • Wooden skewers - 6 pieces, soaked in water for 30 minutes

Steps

  1. In a large bowl, combine the ground cumin, ground coriander, minced garlic, grated ginger, soy sauce, sesame oil, black pepper, salt, and red chili flakes to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated lamb onto the soaked wooden skewers, packing them tightly but not overcrowding.
  5. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the lamb is charred and cooked to your desired doneness.
  6. Remove the skewers from the grill and let them rest for a few minutes.
  7. Serve the skewers hot, garnished with chopped green onions.
