Ingredients

  • Lamb shoulder - 300 grams, cut into 2.5 cm cubes
  • Cumin seeds - 2 teaspoons, toasted and ground
  • Chili powder - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Green onions - 2, chopped for garnish
  • Wooden skewers - 4, soaked in water for 30 minutes

Steps

  1. In a bowl, combine the ground cumin, chili powder, minced garlic, minced ginger, soy sauce, sesame oil, black pepper, and salt to create the marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 15 minutes to allow the flavors to penetrate.
  3. Preheat your grill or barbecue to medium-high heat.
  4. Thread the marinated lamb cubes onto the soaked wooden skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the lamb is cooked through and has a nice char.
  6. Remove the skewers from the grill and let them rest for a few minutes.
  7. Garnish with chopped green onions and serve immediately, pairing with your favorite dipping sauce if desired.
