Ingredients

  • Cucumbers - 2 medium
  • Carrot - 1 medium, julienned

  • Sesame oil - 2 tablespoons
  • Soy sauce - 3 tablespoons (low-sodium if preferred)
  • Rice vinegar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Sesame seeds - 1 tablespoon, toasted
  • Fresh cilantro - 2 tablespoons, chopped (optional)

Steps

  1. Wash the cucumbers and cut off the ends. Using a spiralizer, create noodles from the cucumbers. If you don't have a spiralizer, you can use a vegetable peeler to create thin strips.
  2. In a large bowl, combine the spiralized cucumbers, julienned carrot, red bell pepper, and chopped green onions.
  3. In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, minced garlic, and grated ginger to make the dressing.
  4. Pour the dressing over the cucumber noodle mixture and toss gently until all the vegetables are coated.
  5. Let the salad sit for about 5 minutes to allow the flavors to meld.
  6. Before serving, sprinkle the toasted sesame seeds and chopped cilantro on top for garnish.
