Steps
- Wash the cucumbers and cut off the ends. Using a spiralizer, create noodles from the cucumbers. If you don't have a spiralizer, you can use a vegetable peeler to create thin strips.
- In a large bowl, combine the spiralized cucumbers, julienned carrot, red bell pepper, and chopped green onions.
- In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, minced garlic, and grated ginger to make the dressing.
