Ingredients

  • Sugar - 1 teaspoon
  • Sesame seeds - 1 teaspoon
  • Garlic (minced) - 1 clove
  • Chili oil (optional) - 1/2 teaspoon
  • Salt - to taste

Steps

  1. Soak the dried seaweed in warm water for about 10 minutes until rehydrated, then drain and squeeze out excess water.
  2. While the seaweed is soaking, wash and thinly slice the cucumber into rounds or half-moons.
  3. In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, minced garlic, and salt to create the dressing.
  4. In a large bowl, combine the sliced cucumber and rehydrated seaweed.
