- Spring roll wrappers - 8 pieces
- Carrot - 1 medium, julienned
- Red bell pepper - 1 medium, julienned
- Zucchini - 1 medium, julienned
- Cabbage - 100 grams, shredded
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - for frying
Steps
- In a large bowl, combine the carrot, red bell pepper, zucchini, cabbage, green onion, garlic, and ginger.
- Add soy sauce, sesame oil, salt, and black pepper to the vegetable mixture and toss well to combine.
- Lay a spring roll wrapper on a clean surface, with a corner pointing towards you. Place 2 tablespoons of the vegetable filling near the corner closest to you.
- Fold the corner over the filling, then fold in the sides and roll tightly away from you to form a spring roll. Repeat with the remaining wrappers and filling.
- Heat vegetable oil in a deep pan over medium heat until hot. Fry the spring rolls in batches, turning occasionally, until golden brown and crispy, about 3-4 minutes.
- Remove the spring rolls from the oil and drain on paper towels. Serve hot with your favorite dipping sauce.
