  • Red bell pepper - 1 medium, julienned
  • Zucchini - 1 medium, julienned
  • Cabbage - 100 grams, shredded
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - for frying

Steps

  1. In a large bowl, combine the carrot, red bell pepper, zucchini, cabbage, green onion, garlic, and ginger.
  2. Add soy sauce, sesame oil, salt, and black pepper to the vegetable mixture and toss well to combine.
  3. Lay a spring roll wrapper on a clean surface, with a corner pointing towards you. Place 2 tablespoons of the vegetable filling near the corner closest to you.
  4. Fold the corner over the filling, then fold in the sides and roll tightly away from you to form a spring roll. Repeat with the remaining wrappers and filling.
  5. Heat vegetable oil in a deep pan over medium heat until hot. Fry the spring rolls in batches, turning occasionally, until golden brown and crispy, about 3-4 minutes.
  6. Remove the spring rolls from the oil and drain on paper towels. Serve hot with your favorite dipping sauce.
