- Zucchini - 100 grams, grated
- Carrot - 100 grams, grated
- Red bell pepper - 50 grams, finely chopped
- Green onion - 30 grams, finely chopped
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, grated
- Egg - 1 large
- Chickpea flour (besan) - 75 grams
- Rice flour - 25 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Baking powder - 1/2 teaspoon
- Oil for frying - 200 ml
Steps
- In a large mixing bowl, combine the grated zucchini, grated carrot, chopped red bell pepper, chopped green onion, minced garlic, and grated ginger.
- Add the egg to the vegetable mixture and mix well until combined.
- In a separate bowl, mix the chickpea flour, rice flour, salt, black pepper, cumin powder, turmeric powder, and baking powder.
- Gradually add the dry mixture to the wet mixture and stir until a thick batter forms. If the mixture is too thick, add a tablespoon of water.
- Heat oil in a frying pan over medium heat. Once hot, drop spoonfuls of the batter into the oil, flattening them slightly with the back of a spoon.
- Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
- Serve hot with a dipping sauce of your choice.
