- Rice noodles - 200 grams
- Firm tofu - 200 grams, cubed
- Broccoli florets - 100 grams
- Carrot - 1 medium, julienned
- Bell pepper (red or yellow) - 1 medium, sliced
- Snow peas - 100 grams
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Soy sauce - 3 tablespoons (kosher)
- Sesame oil - 2 tablespoons
- Cornstarch - 2 tablespoons
- Vegetable oil - for frying
- Salt - to taste
- Black pepper - to taste
- Green onions - 2, chopped (for garnish)
Steps
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a bowl, toss the cubed tofu with cornstarch until evenly coated.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Fry the tofu until golden and crispy on all sides, about 5-7 minutes. Remove and set aside.
- In the same skillet, add a little more vegetable oil if necessary. Stir-fry garlic and ginger for 30 seconds until fragrant.
- Add the broccoli, carrot, bell pepper, and snow peas to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
- Return the crispy tofu to the skillet along with the cooked noodles. Pour soy sauce and sesame oil over the mixture. Toss everything together for 2-3 minutes, ensuring the noodles and vegetables are well coated.
- Season with salt and black pepper to taste. Serve hot, garnished with chopped green onions.
